Ingredients, I'm using a flathead this time, a green papaya and fresh ginger, very simple ingredient.

Heat up a frying pan and put half of the ginger slices into some oil, I've used olive oil.

Cut the fish into halves if necessary to fit into the pan.

Pan fry the fish for three minutes on each side

Pour half a liter of boiling water into the pan, for 30 seconds, then pour a liter of water into the soup pot.

Move the fish to the pot with the remaining water from the pan. Add another four slices of ginger. Put the pot on high heat to bring to boil and prepare the papaya for the meanwhile

Peel the papaya, cut it in half , remove the seeds using a spoon.

Cut the papaya in big chunks, put them into the soup when its boiling. Keep it on high heat until the soup is boiled again, turn heat down to low to keep it simmering. Cook for around 1 hour

When it's milky white, add salt to taste :)
